I started working with Erin because over a few years of observing my body’s changing responses to the food I was eating; I noticed that every time I drank beer I felt bloated for days, and I could tell my body wasn’t taking well to meat of any kind. My system was sluggish and something just seemed “off”. Since I already knew my dad had some food allergies, I wanted to thoroughly explore any possible food allergies of my own along with a completely new approach to nutrition.

By the time I called Erin, I was prepared to make any changes necessary to feel better and set myself up for long-term health. Over two years later, I am confident that the long-term changes I’ve made to what I eat (and what I don’t) have been life-giving. I had to make a lot of adjustments, and there was certainly a period where it took a lot of work to eat and drink things that my body will agree with, but I was committed to the goal AND to only eat things I enjoy eating. I’ve reconsidered all childhood food aversions, and while a few remain, many have reversed (now that I know how to prepare them properly…I’m looking at you, Brussels sprouts).

I was already somewhat active, with a consistent habit of Pilates classes 3 times per week. Having changed only my food habits, I lost ~45 pounds. It has been an incredible transformation, both physically and mentally. I feel better than I ever have in my adult life, and I’ve never been more fit. The changes I’ve made thanks to working with Erin are definitely life-long changes, and I’m so thankful I found her.
